Fantastic Friday: Pancakes

Today Scott and EK made the most delicious Cinnamon Oatmeal Pancakes ever!!! Yum! EK LOVED helping her dad mix and pour. She loved eating them too. She kept saying, "These are so delicious!"

Pancakes

Cinnamon Oatmeal Pancakes
2 c whole wheat baking flour
2/3 c quick oats
2 t baking powder
1/2 t baking soda
1&1/2 t cinnamon
1&1/2 c unsweetened applesauce
1 c sour cream
2 lightly beaten eggs
3 t vanilla extract
3/4 c milk

1. Heat a lightly oiled griddle over medium heat.

2. In a bowl, mix dry ingredients, then stir in remaining ingredients and mix until even. (The batter will be pretty thick)

3. Cook on prepared griddle until golden brown on both sides.

4. Serve with butter and maple syrup.

*I thought they were a little blah without syrup so I think next time we may add a little splenda to give a hint of sweetness and I will eat without syrup- I'm not a big syrup fan. Hope you try and enjoy!!!
